- Vineyard surface: 0.8 hectares of our own vineyards (“Aitako” plot – Getaria).
- Vineyard age: Mostly centenary (1898).
- Alcoholic content: 12%.
- Aging: 7 months on its lees.
- Soil: clayey and calcareous.
- Environmental conditions: Vineyards located 300 m from the Cantabrian Sea. Low altitude. South-southwest facing.
- Enologist: Fabiola Soto.
- Visual phase: Yellow hue with golden reflections due to the blend of white and red grapes, both native.
- Olfactory phase: Deep apple aroma accompanied by soft herbaceous and balsamic notes. The citrus tones offer a great sensation of freshness.
- Tasting phase: Sensation of volume with a lot of fruit weight. Unctuous and velvety thanks to its family aging formula. Smooth carbonic notes and good balance between alcohol content, acidity and salinity due to the particular climate of its vineyards. Elegant with a pleasant and intense aftertaste that invites its enjoyment on any occasion.
It is a gastronomic wine and also to drink with family or friends. Recommended for aperitif or table: meats and fish, fresh dishes, seafood… without limits.
- Temperature: Serve chilled in a glass between 6º and 10º.
- Serving: Due to its slight carbonization, we recommend serving it poured (at 20 cm approx.). Thus, when it breaks in the glass, it will release that “txinparta” or characteristic carbon dioxide that enhances its aroma and flavor.
- Cellaring: Good cellaring capacity (2 / 3 years).

I tasted three consecutive vintages, including the very recently bottled 2019 Katalin Iturzaeta in the apogee of freshness. Pulling the cork revealed the presence of some gas and a very primary nose of pippin apples, orchard fruit and flowers and a faint tickle in the palate.
This is a little riper but still only 12% alcohol. It’s light and refreshing, clean, tender and young, with vibrant acidity, clean and long. Delicious. It’s a blend of 85% Hondarribi Zuri and 5% Hondarribi Beltza. 3,000 bottles and 50 magnums were filled in May 2020.

“The characterful and aromatic 2017 Katalin Iturzaeta could be in a sweet spot and feels perfect for current drinking. Having kept the dissolved gas, the cork pops easily, and the wine has developed more nuance and aromas, revealing a golden color with some honeyed notes and a vibrant palate with citrus freshness. It’s tasty, fairly light, ethereal, clean and very easy to dring, finishing dry and with a salty/stony feeling. 3,500 bottles produced. It was bottled in June 2018”.

“This is a tiny producer and its wine was highly recommended and did not disappoint. The 2012 Cepas Centenarias one of the few wines from older wines of the Guetaria appellation is produced from 0.6 hectares of centenary vines, 85% Hondarrabi Zuri the main white grape for Txakoli, and the rest the local red Hondarrabi Beltza. The wine is pale, a bright yellow color, a nose with character, a mixture of white fruit, balsamic herbs and minerals, quite subtle and some elegance. The palate is very dry, very balanced, with good acidity and a mineral personality. It’s a wine with character. Drink now-2015”.
